Egg Pizza; Your weekend breakfast delight is served


How much do you love breakfast? The weekend is the best opportunity to be creative and build your favourite breakfast meal. Not only will it taste incredible but also give you energy for the day ahead. There’s nothing like eggs and bacon for breakfast but we decided to turn it a bit on its head and use chorizo instead for this Egg Pizza recipe. It’s an open omelette which is easy to divide between family members and the spicy sausage adds an extra flavour boost. The smells in your home will be incredible as you wake up this weekend.

Chorizo is a spicy sausage that adds some extra flavour and is well suited to go along with green peppers and onions. The combination is a real treat when you add it to your egg mixture. When you’ve prepared all of your toppings and pouring the eggs into the pan, lightly whisk the eggs to form light curds. This will help cook your egg base more evenly and make it super light. Our Egg Pizza or open omelette is the perfect size for two people but you can easily make some extras. Serve with some coffee and some pan-fried ciabatta bread.

The only breakfast you’ll ever want to eat from now on. Egg Pizza is the fully loaded breakfast that will become the new family favourite.

Ingredients

  • 3 eggs

  • ½ green pepper

  • ½ onion

  • ½ cup grated cheddar cheese

  • 100 g chorizo

  • 1 tsp salt & pepper

  • 80 g butter

  • 50 g chopped parsley

Method

  • Slice onion, pepper and set aside.
  •  Heat a pan, add 10g of butter add the onion and pepper fry for few minutes and set aside.
  • Slice chorizo pour in the same pan you use, add 10g of butter fry till golden brown and set aside
  • Break the eggs into a small bowl beat the egg, heat the pan add the remaining butter, make it hot pour the eggs, make it like and omelette, cook for few minutes .
  • Sprinkle the cheddar cheese, followed by the chorizo, onion mixture cook for few minutes.
  • Use an egg lifter put it in a plate, sprinkle the parsley, cut in four positions and serve hot .
