Healthy veggie dish made with leftovers

Have some leftover veggies remaining after dinner? Try our bubble and squeak recipe transforming leftovers into a lip-smacking delicious dish. This easy British dish is ready in less than thirty minutes and perfect to enjoy as breakfast or even for brunch.

This recipe comes together very easily. If you have some leftover mixed cooked vegetables like leeks, roast parsnips, green beans, brussel sprouts, cabbage, carrots, cauliflower, broccoli or peas, you have all the right ingredients for this recipe.

Preparing the patties mixture will take about 15 minutes and then you can shape your patties with a little bit of seasoned flour. Fry in a little bit of oil until golden-brown and crunchy.

You can serve the bubble and squeak alongside any other dish you feel will work well. We have served it with crispy bacon and a fried egg for a delicious, balanced breakfast. For a beautiful, appetising presentation, stack the bacon and fried egg on top of the bubble and squeak.
